What should we call our winery? We want something that either represents our friend and partner-ship, or something that expresses out interest in expressing the terroir of the grapes we use. Please add a comment if you have an idea. Like anyone reads this other than Chuck and I. And even he only comments when [...] Chuck and I had bottle 2190 or 2400 of Ethan Grenache the other night. We like that one. 2004 Ethan We originally used two 20 gallon plastic fermentors, but I decided to combine the two into one. It is now vigorously fermenting and without frequent punching down, will overflow. I am going to go out and get a larger fermentor today. Smells great, nice cap, everything going well, but temperature still not where I want it. [...] BRIX = 24.5 Not sure about the TA, but it seems right. Will confirm later. |
